Does it really get more down home than Frito Pie? Peggy Hill from King of the Hill tells me it indeed does not! This meal comes together in a flash and is perfect for a busy weeknight or a game day!
Ingredients
1 lb ground beef (I used an 80/20 blend from Pilaroc Marketplace)
1 tbsp olive oil
1 sweet yellow onion, diced
1 tbsp minced garlic
15oz can pinto beans, drained and rinsed
15oz can black beans, drained and rinsed
15oz can tomato sauce
6oz can tomato paste
1/2 cup water
1 1/2 tsp cumin
1 tsp chili powder
1/2 tsp salt and a pinch of black pepper
1 large bag of Frito Scoops
Optional toppings:. Shredded cheese, shredded lettuce, chopped tomatoes, diced avocado, sour cream, sliced green onions, hot sauce

In a large skillet over medium heat, add olive oil and onions. Allow onions to cook until softened. Add minced garlic and ground beef and cook beef until no longer pink. Remove any excess grease.
Add beans, tomato sauce, tomato paste, water and seasonings. Stir well to combine and reduce to a simmer. Allow to cook for 10 mins, stirring occasionally.
To assemble, add a layer of Fritos to your plate. Top with a scoop (or two!) meat mixture. Then add toppings of your choosing. Enjoy!!
