Cheeseburger Quesadillas

These Quesadillas are quick and delicious! Your family will devour them!


  • 1 lb ground beef (I used Pilaroc if you are local!!)

  • 3-4 Tbsp ketchup

  • 2-3 Tbsp yellow mustard

  • 8 medium sized tortillas

  • 1 1/2 cups shredded sharp cheddar cheese

  • 1/2 cup sliced dill pickles

  • (any other hamburger toppings you love! I recommend diced onion and diced tomatoes)

  • Dipping Sauce

  • 1/2 cup mayonnaise

  • 1 tsp onion powder

  • 2 Tbsp minced dill pickle

  • 4 Tbsp ketchup

  • 2 tsp white vinegar


  • To a small bowl add all of the sauce ingredients. Whisk well and store in the fridge.

  • To a skillet over medium high heat add the ground beef break it up and cook it through. Remove any excess grease from the pan. Stir in the ketchup and mustard.

  • To a clean skillet on the stove add a little non stick spray, then place a tortilla down and sprinkle the tortilla with cheese, the ground beef mixture, pickles, more cheese and any other hamburger toppings you enjoy. Place a second tortilla over the top and spray with more oil spray. Cook on medium low for about 4 minutes on each side or until the tortilla is cripsy and the cheese is melted. Repeat this for all of your quesadillas.

  • Serve the quesadillas with the dipping sauce and enjoy!
